CHEF SCHWAIGER’S RECIPE: Plum gazpacho

Plum gazpacho or 4 people.

Ingredients for the red plums: 1 kg of red plums, 1 pinch of spice bread, 2 tablespoons of sugar, half lemon juice.

Ingredients for yellow plums: 1 kg of yellow plums, 3 mint leaves, 2 tablespoons of sugar, juice of an orange, 1 tablespoon of passion fruit puree.

 

Preparation of red plums: pit the plums and mix them with the other ingredients, liquefy them and keep cold.

Preparation of yellow plums: pit the plums and mix them with all the ingredients.

Presentation: firstly, in the middle of the deep dish, put the red plum mixture, then the one of yellow plums; do not mix.

 

Tips:

Ideal to recharge energy at any time of day, easy and fast to prepare.

If you want to be healthier just do not add sugar.

It could be a bit acid-bitter for  somebody,  but it’s definitely a vitamin pump.

If you have good plums you can make more and simply keep it cold.

Surely it will not last long in the fridge, for children it will be a pleasant treat with a ball of their favorite ice cream.
